Well, you boil 'em first. At the same time I brown a little suasage and dice in some hot peppers in a skillet. Spoon the sausage/peppers into the cooked grits, stir, then that mess goes into a large tumbler and into the 'fridge overnite.
Once chilled and 'set', I run a knife around the tumbler to release the grits "cylinder". Slice into patties and fry 'em up in the sausage grease. Um-Um good. Serve with biscuits, greens and bloody marys.![]()
